Thin strips of shark fillet, or Flake as it is called in fish and chip shops. These succulant pieces are trimmed off the sides of the cartilage and gently dried over 14 hours for the perfect moisture content to ensure maximum taste and chewyness. Approximatly 13 -18 pieces , net min weight 150 gm.
